Est! Est!! Est!!! di Montefiascone

Villa Puri produces in the territory of Bolsena the white D.O.P. wine "Est! Est!! Est!!! di Montefiascone" in two varieties: "Scelta vendemmiale" (harvest choice) and "Lago di Bolsena"; these two products differ one each other mainly due to the different alcohol strength they have, resulting from the choice made of the grapes more sugary and properly mature.
Villa Puri's «Est! Est!! Est!!! di Montefiascone» is a austere wine, serious, for connoisseurs, and pleasant for its freshness, softness and intensity: an excellence among this D.O.P. for sure.

Est! Est!! Est!!! - Scelta Vendemmiale

Description: crystalline, straw-coloured with greenish gold highlights. Olfactory impact with good intensity and finesse. Can be recognized ripe and dried fruits. Taste impact of great intensity and sophistication. The body is supported by a great freshness and flavour. The ending of the taste is long and flavorful.
Vineyards: on the hills of lake Bolsena, south-southwest exposure. Altitude from 350 mt. to 450 mt. above sea level.
Type of soil: on mid hill, sloping down to the lake, volcanic, rich of skeletons tending to the dissolution and slowly absorbable potassium.
Grape variety: different clones of Trebbiano and Malvasia together with old local and indigenous varieties.
Harvest: manual and differentiated in three subsequent stages in order to harmonize the organoleptic and physico-chemical components of musts.
Winemaking: cold maceration of grape's peels inside the musts for a night and soft pressing.
Alcoholic fermentation: performed keeping the temperature of the musts stable between 16° and 18° in order to preserve natural flavors.
Alcoholic strength: 13.5% minimum according to the seasonal weather pattern.
Food matching: risotto with a fish and seafood sauce.

D.O.P. regulations

The recognition of the «Est! Est!! Est!!! di Montefiascone» D.O.P. (designation of protected origin), as required by the product regulation, is reserved for those wines made from grapes of the following composition:

  • Trebbiano Toscano, locally called Procanico, from 50% to 65%
  • Trebbiano Giallo, locally called Rossetto, from 25% to 40%
  • Malvasia Bianca and/or Malvasia of Latium, from 10% to 20%

The specification also states that the production area of such grapes must fall in the province of Viterbo and be included in the administrative territory of the municipalities of Montefiascone, Bolsena, San Lorenzo Nuovo, Grotte di Castro, Gradoli, Capodimonte and Marta.
