Description: straw yellow colour to golden, has a delicate and heady scent of ripe fruit and wildflower honey, the taste is sweet without being excessive, modulated by savory-mineral vein and a pleasant bitterness. due to its aromatic persistence it accompanies not only desserts not too sugary, but also foie gras and cheese with fruit compote.
Vineyards: on the hills of lake Bolsena, south- southwest exposure. Altitude from 350 mt. to 450 mt. above sea level.
Type of soil: on mid hill, sloping down to the lake, volcanic, rich of skeletons tending to the dissolution and slowly absorbable potassium.
Grape variety: different clones of Muscat native of the valley of Lake Bolsena, selected and the object of observation and study.
Harvest: manual and differentiated in several subsequent stages according to the progression of noble mould on grapes, carried on until the end of November.
Winemaking: maceration of grape's peels inside the musts for a night and soft pressing.
Alcoholic fermentation: inside stainless steel at a temperature of 18°.
Alcoholic strength: 13.5%+1 according to the seasonal weather pattern.
Food matching: pie with peaches and almonds, tarts with cottage cheese and fruit, mature cheese.
